Buko Pie


We used the remaining crust mixture left when we cooked egg pie. It tasted sooo good that my hubby gave a sheepish smile haha!

Ingredients:
2 cups all-purpose flour
1/3 cup butter
1 teaspoon salt
1/3 cup vegetable shortening
6 to 8 tablespoons cold water
2 cups young coconut meat
3/4 cup granulated white sugar
1/2 cup cornstarch diluted in 1/2 cup young coconut water
