Pan De Coco
I LOVEd Pan De Coco when I was young so it was definitely in my to-bake-list.
I got the recipe from My Sweet Ambitions:
Filling
Ingredients:
1/2 cup sugar
30 grams butter
2 cups desiccated coconut
1/2 cup milk
1 tsp of vanilla
Procedure:
1. Mix all ingredients in a pan
2. Cook until butter is fully dissolved
3. Set aside to cool
Dough
Ingredients:
3 1/2 cups bread flour
1 1/2 tsp of salt
1/4 cup sugar
2/3 cup warm milk
2/3 warm water
1/4 cup butter
8 grams yeast + 1 table spoon of sugar
Procedure:
1. Mix yeast and sugar in the warm water.
2. Set aside to let the yeast rise
3. Mix all dry ingredients
4. Add milk, yeast mixture
5. Knead (10-15min)
6. Set aside for 1-2 hours
7. Form a log, cut into 2, then cut into 2 again
8. Cut into 3, shape into circles
9. Roll and put the filling in the middle
10. Seal and poke 3 holes using fork.
11. Preheat oven
12. Bake for 10-15 min
Here's my filling: I wished I cooked it longer to make it more brown.

Funny sidenotes:
- I used 1/8 measuring cup instead of 1/3. Omg! I had to practice my math again to do the conversion.
- I forgot to put the egg wash before putting my first batch in the oven. I had to put it just because the batch was fully cooked!
