Going Gluten Free : Day 4 : Pumpkin with Minced Pork, Scrambled Egg with Diced Potato

Breakfast
Scrambled egg with diced potato
  • Beat 2 eggs and set aside
  • Saute diced potato in onion and garlic
  • Add salt and pepper to taste
  • Once potato is cooked, add the eggs
  • Cook in low fire.
Morning Snacks
Gluten Free Chunky Chocolate Chips and Gluten Free Pear Granola Bar

Lunch
Pumpkin with Minced Pork
  • Saute minced beef in onion and garlic
  • Add chopped potato and carrots
  • Add pure tomato sauce
  • Add a little sugar and pepper
  • Serve with rice
Afternoon Snacks
Pop Chips BBQ Flavor and Cheerios with Dried Cranberries
Dinner
Pumpkin with Minced Pork
Night Snacks
Half pear
Observations

While he showed tiredness and low energy during the first 2 days, he seems to have adjusted. Like yesterday, he was really happy and energetic today. He seems more engaged too. He was playing with Paopao and me after his dinner today. It's uncharacteristic because usually he would just run around minding his own business.

An autism diagnosis is life changing but not life defining.
