Going Gluten Free : Day 5: Fried Chicken with Potato and Carrots

Breakfast
Scrambled Eggs with Bacon

  • Beat eggs, set aside
  • Cut bacon into cubes
  • Cook bacon (don't add oil as it will have it's own oil)
  • Once the bacon is cooked but not hard, add the eggs
  • Add Salt and pepper to taste

Morning Snacks
Gluten Free Pear Granola Bar, Cheerios with Dried Cranberries
Lunch
Fried Chicken (and we sent some of the left over egg from breakfast)
  • Marinate chicken in chopped garlic, lemon, salt, pepper and Gluten Free Soy Sauce
  • Set aside for about 30 minutes
  • Fry
Carrots and Potato Side
  • Cut the carrots and potato into cubes
  • Saute  garlic and onions
  • Add carrots and potato
  • Add water
  • Add 1/4 of a cube of Kallo Vegetable cubes to taste
Afternoon Snacks
Pop Chips (Sour Cream Flavor), Gojo's Oreo-like Cookies
Dinner
Same as lunch
Night Snacks
Slice of watermelon, Cane juice with coconut cubes
Observations

Mamon is really more energetic these days. I brought them to the park when I got home from work and he played running and laughing for almost an hour.  Although he still walked around looking dazed, occasionally touching the plants, I noticed that he was more engaged. When I come over to get his attention, he looks at me in the eyes and pretends to run away or dock laughing. He is playing with me! *heart flutters*

He also didn't show signs of fatigue even on our way home. In fact, the most amazing thing is that we didn't bring his stroller and he REALLY walked. He didn't asked to be carried.  *heart fGreat developments indeed.

I'm a visual thinker not a language-based thinker. My brain is like Google images.
