Fairy Cupcake

Tried baking again yesterday and I've decided to make Fairy Cupcakes!

For the cupcakes:

1 cup self raising flour
1/2 cup butter or margarine
1/2 cup sugar
2 large eggs
2 tablespoons of milk

  • Preheat oven
  • Beat the butter and sugar
  • Add the milk
  • Slowly add the flour
  • Add the egg
  • Bake for 20 minutes
For the Glaze Icing:


1 1/4 cups confectioners' sugar
3 tablespoons milk
1/2 teaspoon clear vanilla extract

Stir milk into sugar. Add vanilla. Drizzle on cupcakes.

It wasn't super nice. In fact, I think it falls under ok-ok category. The cupcakes didn't taste like pancakes but wasn't soft enough to be classified as cupcakes. The icing didn't turn out nice as it was too watery. Guess I should have added more sugar to thicken it. But hey, it was worth the try. :)
