Going Gluten Free: Day 7: Pininyahang Manok

Breakfast
Scrambled Eggs with Tomato served with Rice
Morning Snacks
Strawberry Cheerios, Peanut Butter Puffs
Lunch
Chicken in Coconut Milk

  • Cut the chicken breast in cubes
  • Heat 2 T oil
  • Add chicken
  • Cook till light brown
  • Cut potato and carrots in cubes. Set aside
  • Add half of Kallo Veggie Cube in the chicken
  • Add potato and carrots
  • Add half cup Coconut milk
  • Add half cup water
  • Add pineapple (cut into cubes)
  • Add salt and pepper to taste
  • Simmer for about 10 minutes
Afternoon Snacks
Gluten Free Chocolate Chips, 1 piece Rock Melon
Dinner
Same as lunch
Night Snacks
Buttered Corn
Observations

His focus has really improved a lot! Well I'm not saying there's a miracle and that he's cured but we are definitely right on track! Now that we see that the diet is working, we are now working on teaching him. We talk and sing a lot to him. We all pitch in!

Paopao is very determined with his role. Today he was marching while changing "Left Right Left Right". Mamon kept looking at him laughing. So Paopao swapped places with me and said to his brother "Daniel! Follow me! Left Right Left Right" And he happily repeated it for almost 15 minutes.

When he lost his brother's focus, he walked infront of him. Interrupting Mamon's walk. Then he started shaking his lubot. I thought he was being naughty again till I realized he was getting his brother's attention. And he succeeded! Mamon started running after him trying to catch his Jollibee backpack. It was heart warming watching my boys interact this way.

A small detour doesn't mean you have to stop. It means it will take you a little longer to get there.
